Pneumatic pressing of the grapes at 0.5 Bars for 2 hours. The beginning and end of the pressing are separated in order to extract uniquely the heart of the juice before the fermentation which lasts 8 to 10 days at low temperatures between 14° and 16° in order to preserve the aromas and finesse of the structure.
