Gentle pneumatic pressing followed by a severe selection of the juice before racking of the must. Fermentation is carried out with controlled temperatures between 12° and 14° in order to preserve the finesse and the aromas.

Nose : Quince, lime, brioche mix well with hints of the country side..
Mouth : A supple attack which sends out persistent hints of fruit coupled with well balanced roundness and liveliness until the end. The final taste is a flattering balance with an impression of harmony.
