As from picking slight pneumatic pressing is carried out followed by raking of the must and fermentation at low temperatures between 14° and 16°. Blending of the 3 grape varieties (Gamay, Côt (Malbec) and Cabernet) is followed after selective tasting preceded by maturing on fine lees for 1 year in order to refine the blend. |
